Sugar Snap Peas with Sesame


Ingredients
1 pound sugar snap peas or snow peas (see note)
Toasted sesame oil
Black or white sesame seeds, or a mixture of both
Kosher salt

Directions

Remove and discard the stem end and the string from each pod. Bring a saucepan of water to boiling, add the peas and let them blanch for 30seconds to one minute. Drain immediately and then immerse them in ice water to cool them. Toss the snap peas in a bowl with sesame oil, sesame seeds, and kosher salt, to taste. Serve at room temperature.

Note:If using snow peas skip the blanching process.
