Watermelon, Prosciutto & Herb Salad with a strawberry-lemon balsamic dressing

Ingredients:
  • 6 cups mixed baby greens
  • 2 cups cubed watermelon
  • 1/4 cup crumbled feta cheese
  • 2 oz prosciutto, torn or sliced into 1" pieces
  • 1/4 cup toasted pine nuts
  • 1/2 cup finely sliced fresh basil
  • 1/2 cup finely sliced fresh mint
  • Dressing:

  • 1/2 cup strawberry jam (freezer is best for freshest flavor)
  • 2/3 cup aged balsamic vinegar
  • 1/4 t. garlic powder
  • 1/2 cup extra virgin olive oil
  • zest of 1 lemon (about 1-1 1/2 t.)
  • pinch of salt and pepper
Method:

Assemble greens on the plates. Top each with 1 cup watermelon, 2 T., feta, 1 oz Prosciutto, 2 T. pine nuts, and herbs. Whisk together all dressing ingredients and serve immediately. You should have some extra dressing for later. This is also great with strawberries or raspberries!
